macadamia nut pancakes.with maple syrup

when i lived on maui, there was a place down the street from where i worked that i would stop at every morning for these pancakes. i still crave these, so i decided to come up with a recipe that would suit my taste. these are hawaiian style macadamia nut pancakes which are very light and flavorful. each bite has a rich, nutty flavor and is complimented nicely with the sweet syrup. i really wanted to try a white chocolate sauce with these pancakes, but unfortunately i was out of white chocolate, so i decided to just go with my regular maple syrup and it was just as i expected- amazing! if you ever make it to the hawaiian island of oahu, go straight to boots & kimo's homestyle kitchen in kailua to try their macadamia nut pancakes. they're world famous & beyond crave-worthy. 

Ingredients


1/2 cup macadamia nuts (chopped)


1 tsp vanilla extract
2 eggs
3 tbsp butter (unsalted & melted)
1 1/2 cups buttermilk
1/4 teaspoon Salt
1/2 teaspoon Baking soda
1 1/2 teaspoons baking powder
3 tablespoons sugar
1 1/2 cups all-purpose flour
1/2 cup maple syrup


Directions
In a mixing bowl combine the flour, sugar, baking powder, baking soda, and salt. Mix thoroughly.
In a separate bowl, combine the buttermilk, butter, eggs, and vanilla extract. 
Mix well.
Combine the dry and wet mixtures till you get a lumpy batter
Heat a non stick frying pan or griddle over low heat.
Depending on the size of the pancake you like pour a portion of the batter into the non-stick frying pan or griddle.
Sprinkle some of the chopped macadamia nuts onto the pancake.
Once the sides of the pancake begins to harden and bubbles start to appear on the top of the pancake flip it over.
Cook for another minute or two and remove.


I just used regular maple syrup just because I had it on hand. If you feel adventurous and have more time, you can try whipping up a coconut syrup or a white chocolate syrup. Either way,they are all divine on these pancakes!
