coconut rum cupcakes with coconut cream cheese frosting.

ok, so here is cupcake #30, the coconut rum cupcake with coconut cream frosting, recipe courtesy of ming makes cupcakes. as you all probably know, i just recently posted about ming and her delicious cupcakes just a couple of days ago. i must say that this cupcake is the best i have ever had, better than anything i've ever had at sprinkles, better than crumbs, & much better than any cupcake store-bought. the frosting is beyond the best thing i've ever tasted , not too sweet , but instead this amazing combination of coconut rum, sugar and cream cheese. i  definitely had to separate myself from the bowl of frosting, it was so good! the cupcake batter itself turned out perfect and moist. overall, these are amazing and very simple to make-


CUPCAKES
2 cups flour
1 tsp soda
1/2 tsp salt
1 1/4 cups light brown sugar
1 stick butter
1 egg
1 cup buttermilk
1/3 cup coconut rum

Mix flour, soda, and salt.  In a separate bowl, cream brown sugar and butter until fluffy.  Add egg and beat well. Add buttermilk and flour mixture alternately while mixing.  Add rum and mix well. Pour into lined cupcake pan.  Bake at 375 for 20 minutes, or until toothpick comes out clean.

FROSTING
 4 oz. cream cheese
1/2 stick butter, room temp.
2 cups confectioners’ sugar
3 T coconut rum

Mix together ingredients with an electric mixer until smooth and creamy.  Frost cupcakes.
