white chocolate mousse.

mmmm, white chocolate mousse. i can't say i love anything more. this is such an easy recipe i felt like i actually cheated a little bit;) believe me, the hardest part was seeing it every time i opened the fridge and impatiently dancing around & waiting for it to chill properly! this came out just as i expected mousse - sweet, smooth ( the consistency was perfect- light as air!) , &  cool . it makes the perfect backdrop for fresh berries-

6 oz. white chocolate for baking, broken into pieces or white chocolate chips

1 1/2 cups heavy whipping cream, divided 
1/4 cup confectioners' sugar 
1 teaspoon vanilla extract 


Heat white baking chocolate and 1/2 cup cream in a small saucepan on low heat. Mix well until all is blended. Do not burn!  Cool completely. 

Beat remaining cream, confectioners' sugar and vanilla extract in small mixing bowl until stiff peaks form (do not overbeat). 

Fold melted white chocolate mixture into whipped cream mixture; Strain into individual serving dishes (such as wine glasses like I used above) and let chill in fridge overnight.

Makes 8 servings. 

For soft-set mousse like pictured, beat cream just until soft peaks form. Layer firm or soft mousse with fresh berry slices.
