mini nutella cheesecakes.

because of this seemingly effortless recipe, my love for nutella, and my tendency to try and incorporate it into everything, i couldn't resist making these yummy mini cheesecakes . the hardest part is waiting for each one to chill, which is not an easy task for the impatient like me. the longer you let them cool, the better they taste. 

Ingredients

  • 1 (12 ounce) package vanilla wafers
  • 2 (8 ounce) packages cream cheese
  • 1/2 cup of nutella
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F. Line miniature muffin tins with miniature paper liners.

Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.

In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Carefully pour in nutella and mix just enough to incorporate into batter. Fill each miniature muffin liner with this mixture, almost to the top.

Bake for 15 minutes. Cool.
