this is the best potato salad. ever.
so i finally got around to making potato salad this summer and well, it was about time. consequently, i'm having a serious problem staying away from the bowl full of the creamy potatoes sitting in my fridge, just waiting to be devoured. the recipe of which my mother passed on to me is simple, requires very few ingredients, and so delicious it deserves an "omg". i had a medley of purple potatoes on hand and voila, i now have a not only incredible tasting but a very pretty colorful potato salad. and back to the fridge; my mouth is watering at the even thought of trying to describe this.
2 pounds small purple potatoes
1 purple onion, finely chopped
2 celery stalks, chopped
1 cup mayonnaise
1/4 cup Dijon mustard
2 tablespoons yellow mustard
1 teaspoon celery seed
3/4 teaspoon ground cayenne pepper
- salt, to taste
Bring a pot of salted water to a boil. Boil the potatoes until fork tender , about 20 minutes. Drain, then rinse in cold water, and cut in quarters. Place the warm potatoes in a large bowl and toss with onion, celery. Stir in mayonnaise, mustard, celery seed, and cayenne. Check seasoning. Toss gently and serve room temperature or cold.
